Ingredients
  • 1 whole chicken
  • Juice of 2 oranges
  • Juice of 2 limes
  • Juice of 1 lemon
  • 1 tsp soy sauce
  • 1/4 cup oyster sauce
  • 1 tsp oregano
  • 1.5 tsp salt
  • 1.5 tsp pepper
  • 4 garlic cloves, minced
  • 4 sprigs of thyme
  • 2 sage leaves
  • 2 bay leaves
  • 1/4 cup olive oil
  • 2 tbsp parsley
Citrus Roasted Chicken
Instructions
  • Preheat an oven to 375F.
  • Using a sharp knife or shears, breast side down, cut and remove the backbone from the chicken.
  • Flip the chicken over once the backbone has been removed and press down to break the breastbone and flatten the chicken.
  • Rub the chicken with the rest of the ingredients and bake for about an hour.
  • Every 15 minutes, baste with the pan juices.
  • Serve with rice.
