Ingredients
1 whole chicken
Juice of 2 oranges
Juice of 2 limes
Juice of 1 lemon
1 tsp soy sauce
1/4 cup oyster sauce
1 tsp oregano
1.5 tsp salt
1.5 tsp pepper
4 garlic cloves, minced
4 sprigs of thyme
2 sage leaves
2 bay leaves
1/4 cup olive oil
2 tbsp parsley
Instructions
Preheat an oven to 375F.
Using a sharp knife or shears, breast side down, cut and remove the backbone from the chicken.
Flip the chicken over once the backbone has been removed and press down to break the breastbone and flatten the chicken.
Rub the chicken with the rest of the ingredients and bake for about an hour.
Every 15 minutes, baste with the pan juices.
Serve with rice.
