Franks and Cabbage

The Best Dressed Chicken
  • 12 oz. pack Reggae Jammin Chicken Sausage
  • 2 bunch pak choy leaves (thinly sliced)
  • 4 strips bacon (chopped)
  • 1 medium head of cabbage (sliced)
  • 1 medium onion (sliced)
  • 2 tsps. garlic (minced)
  • ½ tsp ginger (grated)
  • ½ bell pepper (sliced)
  • 1 tsp. smoked paprika
  • 1 tsp. chicken seasoning
  • 2 medium tomatoes (diced)
  • Salt and pepper to taste
Franks and Cabbage
  • In a large skillet over medium heat, sauté bacon until brown this may take about 5 minutes. Add onions and sausage and brown for about 2 minutes
  • Add garlic, ginger, sweet peppers and powdered spices and stir.
  • Then add cabbage and pak choy and diced tomatoes, and 1/4 water stir to evenly coat the vegetables with seasonings. Cover and cook until cabbage is just tender or softer to your liking.
  • Season with salt and black pepper.
  • Serve with boiled ground provisions and or fried green plantains.
