For the Chicken:
  • 24 The Best Dressed Chicken Tenders
  • 24 slider buns
  • ½ tablespoon oil for the parchment or foil-lined tray
For the Buffalo Sauce :
  • 1 tablespoon Tabasco Sauce – or as desired
  • 2 tablespoons hot sauce – or as desired
  • 4 tablespoons water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon brown sugar
  • 6 tablespoons melted butter
  • 3 teaspoons apple cider vinegar
  • Pinch of cayenne pepper
For the Coleslaw:
  • 1 cup each purple and green cabbage, grated finely
  • 2 medium carrots, grated
  • 2 sticks celery, stripped and finely sliced
  • 2 scallions, finely chopped
Coleslaw dressing
  • 1 cup mayonnaise
  • 2 tablespoon olive oil
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons honey
  • Juice of 1 lime
  • 1 tablespoon chopped parsley
  • Freshly cracked pepper
For the Quick Pickled Red Onion:
  • 3 large red onions, very thinly sliced
  • ½ cup cherry or sorrel juice
  • ½ cup red wine vinegar
  • 2 tablespoons lime juice
  • ½ cup sugar
  • 1 cup water
  • 1 teaspoon salt

The Pickled Onions
  • Combine all the pickling ingredients except for the red onions in a small saucepan, and simmer over medium-high heat for about 10 minutes or until the sugar and salt have dissolved.
  • Add the onions to the sauce and cook for an additional minute. Then, pour the onions and sauce into a sterilized canning jar, allow to cool, and store in the fridge for at least 2 hours before use, as this will help the flavours to meld. The pickled onions will keep well refrigerated for up to a week.
The Buffalo Sauce
  • Combine all the ingredients in a bowl and test for spice preference by adding or reducing hot sauce accordingly.
  • Mix well and set aside half of the sauce for basting and dipping.
The Coleslaw
  • Combine all the ingredients in a bowl, cover, and refrigerate until ready to use. In a separate bowl, whisk together the coleslaw dressing ingredients until smooth, and refrigerate until ready to use. Dress the coleslaw just before assembling the sliders.
The Chicken Tenders
  • Preheat the oven to 350 degrees Fahrenheit.
  • Place the chicken tenders on a baking tray lined with parchment or foil brushed with oil and add the remaining sauce.
  • Marinate for about 5 minutes before placing the tenders in the hot oven and baking for 20 to 25 minutes.
  • Test for doneness at 175 Fahrenheit in the largest piece and rest the chicken for 10 minutes.
  • To assemble the sliders, place a chicken tender on each base, apply a good drizzle of buffalo sauce, top with coleslaw, and Quick Pickled Red Onions. You can also serve the coleslaw on the side. Finally, top with the slider bun crown.
