For the Chicken:
  • 8 - 10 The Best Dressed Drumsticks
For the Jerk Marinade:
  • 1 Scotch Bonnet pepper, seeds removed and finely chopped
  • 5 scallions, green and white parts, finely chopped
  • 2 cloves garlic, finely chopped
  • 6 sprigs fresh thyme, leaves picked from stem or 2 teaspoons dried
  • ¼ teaspoon ground pimento
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 1 tablespoon ground ginger
  • 1 tablespoon brown sugar
  • 1 tablespoon barbecue sauce
  • 2 medium onions, finely chopped
  • 4 tablespoons light soy sauce
  • 4 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon salt
  • 1 tsp black pepper
  • 1 cup water
For the Cilantro Sauce:
  • 1 tablespoon sour cream
  • ⅓ cup mayonnaise
  • Juice from ½ a lime
  • ½ cup fresh cilantro leaves
  • 1 tablespoon water
  • Sea salt and pepper to taste
Grilled Jerk BBQ Drumsticks with Creamy Cilantro Sauce
  • Rinse the drumsticks and pat dry with a paper towel.
  • Blend all the ingredients of the Creamy Cilantro Sauce until smooth. Refrigerate until ready to use.
  • Combine all ingredients of the Jerk marinade in a blender and pulse until smooth.
  • Reserve ¼ cup of marinade to use for basting while grilling.
  • Place chicken drumsticks in the marinade and rub thoroughly to coat completely.
  • Put marinated chicken in a covered container in fridge for 1 hour or overnight.
  • Bring marinated chicken to room temperature.
  • Preheat barbecue grill to 345 degrees Fahrenheit.
  • Rub cooking oil on the cooking surface of the grill.
  • Place chicken on grill, skin side up and cook uncovered, basting with the reserved marinade and turning every 5 -7 minutes to prevent burning.
  • Grill for about 45 minutes or until an instant-read thermometer inserted into the chicken registers 165 degrees Fahrenheit and juices run clear.
  • Serve Jerk Chicken on a bed of rice and peas, roasted sweet potato, plantain or with your favourite sides. Drizzle with Creamy Cilantro Sauce as a cool element to offset the spiciness of the Jerk.
