Jerk Rotisserie Chicken Nacho Bowl

Ingredients
  • 8 oz bag of long cut plantain chips
  • 2 cups shredded Reggae Jammin’ Jerk Rotisserie Chicken
  • 2 cups shredded Mexican blend cheese
  • ½ cup cilantro leaves
  • ½ cup tomato salsa
  • ½ cup sour cream
  • 4-6 lime wedges
  • ¼ cup sweet tomato chutney (optional)

Instructions
  • Preheat the oven broiler to low setting, or oven to 425° F.
  • Place two handfuls of plantain chips in a 12-inch round ceramic bakeware.
  • Evenly spread 1 cup shredded chicken on top, then add 1 cup cheese.
  • Repeat step 3.
  • Bake nachos for 10-12 minutes, or until the cheese is melted.
  • Remove from the oven.
  • Add tomato salsa and a dollop of sour cream.
  • Garnish with cilantro leaves and lime wedges.
  • Serve while cheese is hot.
