Jerk Rotisserie Chicken Nacho Bowl

Ingredients
8 oz bag of long cut plantain chips
2 cups shredded Reggae Jammin’ Jerk Rotisserie Chicken
2 cups shredded Mexican blend cheese
½ cup cilantro leaves
½ cup tomato salsa
½ cup sour cream
4-6 lime wedges
¼ cup sweet tomato chutney (optional)
Instructions
Preheat the oven broiler to low setting, or oven to 425° F.
Place two handfuls of plantain chips in a 12-inch round ceramic bakeware.
Evenly spread 1 cup shredded chicken on top, then add 1 cup cheese.
Repeat step 3.
Bake nachos for 10-12 minutes, or until the cheese is melted.
Remove from the oven.
Add tomato salsa and a dollop of sour cream.
Garnish with cilantro leaves and lime wedges.
Serve while cheese is hot.
