Lobster Boil with Jerk Chicken Sausage

  • 4 Best Dressed ChickenJerked Chicken Sausages, cut diagonally
  • 4 lobster tails
  • 4 irish potatoes washed and chopped into cubes
  • 2 cups white wine
  • ¼ cup chopped garlic
  • ½ cup salted butter
  • 1 firm toothbrush (for scrubbing the potatoes)
  • Lime juice
  • Lime wedges (garnish)
  • Parsley (garnish)
  • Crushed pepper
  • ¼ tsp nutmeg
  • Escallion
  • Thyme
  • Pimento
  • 3 tbsp fish seasoning
  • 1 tsp smoked paprika
  • 1 scotch bonnet pepper
  • Hand towel
  • 2 cups fish broth
  • 1 tbsp oil
Lobster Boil with Jerk Chicken Sausage
  • Clean lobster tails with a strong toothbrush to get rid of all excess sand.
  • Cut tails with shells on, horizontally.
  • Wash tails with water and some lime juice. Pat dry with hand towel.
  • In a large pan on medium heat, add oil and sausages. When browned, remove from pan.
  • Add butter and freshly chopped garlic, cook for 1 minute then add white wine to deglaze the pan. Cook to allow the alcohol to cook off.
  • Add fish broth, scotch bonnet pepper, escallion, thyme, pimento and nutmeg. Cook on medium to low heat for 20 mins.
  • Meanwhile, season lobster tails with fish seasoning and smoked paprika.
  • Add cubed potatoes to your pan. When potatoes are halfway cooked, add nutmeg, sausages and the lobster tails.
  • Adjust heat to medium and allow to simmer for 20 mins, until the lobsters are fully cooked.
  • Season with salt and pepper to taste.
  • Serve in a large casserole dish
  • Garnish with lime wedges and parsley .

  • Add sweet corn on the cob
  • You can use crab or a combination of all seafoods.
  • If serving for friends, always check if anyone has allergies before- hand to avoid cross contamination.
  • Add coconut milk if you prefer a creamier sauce.
