Ingredients
2 thick slices of bread
2 eggs
1/4 tsp salt
1/4 tsp black pepper
4 slices of black forest ham
1 tbsp butter
1 tsp mustard
1 tbsp olive oil
Instructions
Brush the bread with the butter and mustard and toast until golden brown.
In a non-stick pan, heat the olive oil and fry the eggs for about 2 minutes on medium heat.
Remove the eggs and add the ham slices. Cook until slightly crisp.
To assemble, top the bread with the 2 ham slices each and 1 egg then sprinkle with the salt and pepper.
