Ingredients
4 Best Dressed Chicken Breasts
8 cups water
3 cups diced pumpkin
2 carrots, chopped into 1 inch pieces
3 stalks celery, chopped into 1 inch pieces
2 cho-cho, peeled and sliced into 12 pieces
1 lb Irish potatoes, cut into small cubes
1 pack chicken noodle soup
2 tsp salt
¼ tsp black pepper
1 sprig thyme
1 Scotch Bonnet Pepper
10 pimento berries
Dumplings (Spinners)
1 cup flour
1/3 cup water
¼ tsp salt
Instructions
Bring water to a boil and add chicken, pumpkin and yellow yam and cook for 15 minutes or until pumpkin is very soft.
Mix together dumpling ingredients to make firm dough. Form into 7 to 8 flat dumplings or long spinners.
Add chicken noodle soup along with celery, carrots, cho-cho, dumplings and Irish potatoes and allow to simmer for 15 minutes.
Stir pot and Scotch bonnet pepper, thyme and pimento berries on top, cover and cook for 10 minutes.
Serves 3 to 4.
