Ingredients
  • 4 Best Dressed Chicken Breasts
  • 8 cups water
  • 3 cups diced pumpkin
  • 2 carrots, chopped into 1 inch pieces
  • 3 stalks celery, chopped into 1 inch pieces
  • 2 cho-cho, peeled and sliced into 12 pieces
  • 1 lb Irish potatoes, cut into small cubes
  • 1 pack chicken noodle soup
  • 2 tsp salt
  • ¼ tsp black pepper
  • 1 sprig thyme
  • 1 Scotch Bonnet Pepper
  • 10 pimento berries
Dumplings (Spinners)
  • 1 cup flour
  • 1/3 cup water
  • ¼ tsp salt
Chicken Soup
Instructions
  • Bring water to a boil and add chicken, pumpkin and yellow yam and cook for 15 minutes or until pumpkin is very soft.
  • Mix together dumpling ingredients to make firm dough. Form into 7 to 8 flat dumplings or long spinners.
  • Add chicken noodle soup along with celery, carrots, cho-cho, dumplings and Irish potatoes and allow to simmer for 15 minutes.
  • Stir pot and Scotch bonnet pepper, thyme and pimento berries on top, cover and cook for 10 minutes.
  • Serves 3 to 4.
